On a senior production chef apprenticeship course, you’ll help manage a team producing standardised dishes and menus within a kitchen environment.

A senior production chef handles regularly preparing meals for customers to perfection according to predetermined standards.

You will learn to work independently and lead a team in hot and demanding kitchen environments as an apprentice. You’ll certainly work in organisations where a centralised development team creates brands, recipes, and menus. 

You’ll need to organise your workforce to work quickly and efficiently, producing large quantities of food regularly, which will need energy, incredibly rigorous organisational skills, and attention to detail.

Before commencing this apprenticeship, you must have prior experience in an operational position with management responsibilities.

You’ll be ready to progress to a higher-level position when you finish.

What you’ll learn

On a senior production chef apprenticeship course, you’ll learn to:

  • Supervise the production of menu items and meals that have been created centrally in compliance with organisational objectives.
  • Ensure that all deliveries are thoroughly scrutinised and stored.
  • Supervise the use and maintenance of food processing equipment.
  • Assist team members in assuring the timely delivery of high-quality, specification-compliant meals.
  • Maintain harmony within the team and with colleagues from other departments by recognising and dealing with problems constructively to reach a successful resolution.
  • Use cost-cutting measures to improve performance, revenue, profit margins, and customer satisfaction.
  • Utilise technology to increase efficiency and production.
  • Execute activities in line with business/brand values that actively promote the firm, increase competitiveness, and help attain business objectives.

Entry requirements

You’ll usually need:

  • Previous achievement of level 2 production chef or a minimum of 12 months of relevant industry experience.
  • Apprentices without level 2 English and maths will need to achieve this level before taking the end-point assessment

Assessment methods

The End Point Assessment comprises three distinct assessment methods: 

  • On-demand test
  • Practical observation
  • Professional discussion

Duration, level, subjects and potential salary upon completion

  • Duration: 12 months
  • Level: 3 – Advanced Apprenticeship
  • Relevant school subjects: Food technology
  • Potential salary upon completion: £25,000 per annum
